Nectarines, Goat’s Cheese and Basil Pizza
You know how sometimes you really crave pizza? - You’re gonna tell me that happens often right? ;-) - Well, I have a great recipe for you! Here's a lighter and healthier version of a pizza. And to top it all off it’s DE-LI-CIOUS!
I love pizza because you can mix and match all the ingredients you want and like on them. You can create new tasty combinations any time depending on what you find in your fridge. it’s easy and quick and (did I say?) delicious!
I found this particular recipe through Pinterest (http://www.yummymummykitchen.com/2012/07/two-no-sauce-summer-pizza-recipes.html ).
I had some nectarines and basil at home so I decided to go for the nectarines and goat’s cheese. I haven’t tried the other recipe yet but it looks really good as well.
Recipe:
Ingredients:
-pizza dough
-2 whole nectarines, washed
-goat’s cheese
-2 tbsp of honey
-basil leaves
Method:
-Spread out the pizza dough on a paper-coated tray. Brush the dough with olive oil and salt, to taste.
-Cut up the nectarines in even quarters and slice the goat’s cheese. Place the nectarines and goat’s cheese on the pizza.
-Drizzle some honey over the fruit and cheese. Don’t be afraid to be generous if you love honey, the taste tends to fade while cooking.
-Put in oven until pizza crust is crisp and golden.
-Add fresh basil leaves over pizza and serve.
Bon Appétit!
